How to Prepare Herbed New Potatoes

Herbed new potatoes are an easy way to prepare your own delicious cooked produce from the garden. Makes for a simple alternative crushed new potatoes which can of course be made savoury and herby too. Try that recipe out as the alternative.

I like a waxy potato for this like Charlotte but a Pink Fir Apple does wonders too. The herbs come from the garden as well. See our tips for growing mint, parsley and dill.

Serves 4; Preparation time; 10 minutes; Cooking time: 15 minutes.

Ingredients:

  • 1kg/2.2lb peeled or scrubbed new potatoes – leaves the skins on if you like.
  • a small handful of mint – finely chopped
  • a small handful of parsley – chopped
  • chopped sprigs of dill (optional)
  • a drizzle of olive oil
  • salt and black pepper to taste

Preparation:

  1. To a large saucepan of cold water, add the potatoes.
  2. Bring to the boil and simmer for 15 minutes
  3. Chop the herbs
  4. Check the potatoes by inserting a sharp knife or skewer into a couple.
  5. One cooked drain through a colander or sieve and return to the pot
  6. Scatter the herbs over the potatoes,
  7. Drizzle with olive oil and season with salt and black pepper.
