How to Prepare The Greek Breakfast Dish, Strapatsada

For the Strapatsada:

  • 4 large eggs
  • 2 Greek sausages (Loukaniko), sliced
  • 1 cup cherry tomatoes, halved
  • 1 small chili pepper, finely chopped (adjust to taste)
  • 2 spring onions, finely chopped
  • 1/4 cup crumbled feta cheese
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley or dill for garnish

For Serving:

  • 4 slices of rustic bread, toasted


  1. Prepare the Ingredients:
    • Slice the Greek sausages into rounds.
    • Halve the cherry tomatoes.
    • Finely chop the chili pepper and spring onions.
    • Crumble the feta cheese.
    • Toast the slices of bread until golden brown and crisp. Keep warm.
  2. Cook the Greek Scrambled Eggs (Strapatsada):
    • In a large non-stick skillet, heat 1 tablespoon of olive oil over medium heat.
    • Add the sliced Greek sausages to the skillet and cook for 3-4 minutes until they start to brown and release their juices.
    • Once the sausages are lightly browned, add the halved cherry tomatoes to the skillet. Cook for another 2-3 minutes until the tomatoes begin to soften and release their juices.
    • Add the chopped chili pepper and spring onions to the skillet, and sauté for 1-2 minutes until fragrant.
    • In a bowl, crack the eggs and beat them lightly with a fork or whisk. Season with salt and pepper to taste.
    • Push the sausage and tomato mixture to one side of the skillet and pour the beaten eggs into the empty space.
    • Allow the eggs to cook undisturbed for a minute or so until they start to set around the edges.
    • Using a spatula, gently stir the eggs, folding them over the sausage and tomato mixture, until they are softly scrambled and cooked to your liking.
    • Once the eggs are cooked, sprinkle the crumbled feta cheese over the top and gently fold it into the eggs until slightly melted.
  3. Serve the Strapatsada:
    • Divide the scrambled eggs with sausage, cherry tomatoes, chili pepper, spring onions, and feta cheese between two serving plates.
    • Garnish with fresh parsley or dill for a pop of color and freshness.
    • Serve the Strapatsada immediately with the toasted bread on the side, allowing your guests to enjoy the delicious combination of flavors and textures.
