Ingredients
For the Strapatsada:

- 1/4 cup crumbled feta cheese
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley or dill for garnish

Preparation
- Prepare the Ingredients:
- Slice the Greek sausages into rounds.
- Halve the cherry tomatoes.
- Finely chop the chili pepper and spring onions.
- Crumble the feta cheese.
- Toast the slices of bread until golden brown and crisp. Keep warm.
- Cook the Greek Scrambled Eggs (Strapatsada):
- In a large non-stick skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the sliced Greek sausages to the skillet and cook for 3-4 minutes until they start to brown and release their juices.
- Once the sausages are lightly browned, add the halved cherry tomatoes to the skillet. Cook for another 2-3 minutes until the tomatoes begin to soften and release their juices.
- Add the chopped chili pepper and spring onions to the skillet, and sauté for 1-2 minutes until fragrant.
- In a bowl, crack the eggs and beat them lightly with a fork or whisk. Season with salt and pepper to taste.
- Push the sausage and tomato mixture to one side of the skillet and pour the beaten eggs into the empty space.
- Allow the eggs to cook undisturbed for a minute or so until they start to set around the edges.
- Using a spatula, gently stir the eggs, folding them over the sausage and tomato mixture, until they are softly scrambled and cooked to your liking.
- Once the eggs are cooked, sprinkle the crumbled feta cheese over the top and gently fold it into the eggs until slightly melted.
