Kale salad with apple, beetroot, walnut, and raisins is a delicious and healthy salad that is packed with nutrients and flavor, You can also use kale sprouts as well in this salad. I like the idea of using what is a relatively tough leaf in combination with sweet apple and earthy beetroot with extra sweetness from the raisins. 

Ingredients:

  • 1 bunch of kale, stems removed and leaves finely chopped
  • 1 medium-sized beetroot, peeled and grated
  • 1 medium-sized apple, cored and diced
  • 1/2 cup walnuts, chopped
  • 1/2 cup raisins
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Preparation:

  1. Start by preparing the kale. Remove the stems and chop the leaves into bite-sized pieces. Rinse thoroughly and dry using a salad spinner or paper towels.
  2. In a large mixing bowl, combine the kale, grated beetroot, diced apple, chopped walnuts, and raisins. Toss everything together until well combined.
  3. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper. Drizzle this dressing over the salad and toss well.
  4. Serve immediately or let it sit for 30 minutes in the refrigerator to allow the flavors to meld together.
