Lapis Surabaya is a classic Indonesian cake that is popular for its unique appearance and delicious taste. It is a layered cake made with a combination of flour, sugar, butter, eggs, and milk, and it is typically flavored with vanilla.

The cake is named after Surabaya, the second-largest city in Indonesia, and it is often served during special occasions and celebrations such as weddings, birthdays, and religious festivals.

The layers of Lapis Surabaya are formed by separating the cake batter into several portions, adding food coloring to some of the portions, and then baking them one layer at a time. This process can be time-consuming and requires patience, but the end result is a beautiful cake with alternating layers of yellow and pink, or any other desired colors.

In this recipe, we’ll be adding a twist by incorporating strawberry jam between the layers and topping the cake with prunes for added sweetness and texture.

Ingredients:

For the cake:

  • 300g all-purpose flour
  • 300g granulated sugar
  • 300g unsalted butter, at room temperature
  • 8 large eggs, separated
  • 200ml whole milk
  • 1 tsp vanilla extract
  • Food coloring (optional)
  • 1/2 cup strawberry jam

For the topping:

  • 1/2 cup prunes, chopped
  • 1/4 cup water
  • 1/4 cup granulated sugar

Preparation:

  1. Preheat the oven to 350°F (180°C) and grease a 9-inch square baking pan.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the egg yolks, one at a time, mixing well after each addition.
  4. Sift the flour into the mixture and stir until just combined.
  5. Add the milk and vanilla extract and stir until the batter is smooth.
  6. In a separate mixing bowl, whisk the egg whites until stiff peaks form.
  7. Gently fold the egg whites into the batter until fully incorporated.
  8. Divide the batter into 3 equal portions.
  9. Add food coloring to two of the portions, leaving the third portion plain.
  10. Pour the plain batter into the prepared pan and bake for 10-12 minutes, or until the top is lightly golden brown.
  11. Remove the cake from the oven and let it cool for a few minutes.
  12. Pour half of the strawberry jam on top of the plain layer, spreading it evenly with a spatula.
  13. Pour one of the colored batters on top of the jam layer and bake for another 10-12 minutes, or until the top is lightly golden brown.
  14. Remove the cake from the oven and let it cool for a few minutes.
  15. Pour the remaining strawberry jam on top of the first colored layer, spreading it evenly with a spatula.
  16. Pour the remaining colored batter on top of the jam layer and bake for another 10-12 minutes, or until the top is lightly golden brown.
  17. Remove the cake from the oven and let it cool completely.
  18. In a small saucepan, combine the chopped prunes, water, and sugar. Bring the mixture to a boil and simmer for 5-7 minutes, or until the prunes are soft and the mixture has thickened.
  19. Let the prune mixture cool for a few minutes.
  20. Spread the prune mixture on top of the cooled cake, using a spatula to create a smooth and even layer.
  21. Let the cake cool completely before slicing and serving.
