Ingredients:

  • 1 can (14 oz) coconut milk
  • 1/4 tsp salt
  • Crushed ice

Preparation:

  1. In a large pot, add water, grated palm sugar, and pandan leaf (if using). Bring it to a boil until the sugar has completely dissolved.
  2. Add the cubed sweet potato to the pot and let it cook for about 5-7 minutes, or until it starts to become soft.
  3. Add the sliced bananas to the pot and let it cook for an additional 2-3 minutes, or until the bananas are soft.
  4. Add the can of coconut milk to the pot and stir gently to combine.
  5. Add salt and mix well.
  6. Turn off the heat and let the kolak sit for a few minutes to cool.
  7. Serve the kolak in a bowl with some crushed ice on top.

This recipe serves 4-6 people, depending on the serving size.

You can adjust the sweetness of the kolak by adding more or less palm sugar, depending on your preference. You can also add other ingredients to the dish, such as jackfruit, sweet corn, or taro, to make it more flavorful and interesting.
