Lapis Legit, also known as Spekkoek or Indonesian Layer Cake, is a traditional Indonesian cake that is popular in Indonesia, Malaysia, and the Netherlands. The cake is made of layers of spiced butter cake, which are baked one by one until the cake is formed.

The name Lapis Legit literally means “layered sweet”, and it is a popular dessert during special occasions and celebrations, such as weddings, birthdays, and religious festivals.

The cake has a unique texture and flavor due to the combination of spices, which include cinnamon, cardamom, and cloves, and the use of butter and egg yolks in the batter. The cake is typically served in thin slices, and it has a distinctive layered appearance.

To make Lapis Legit, the batter is divided into several portions, and each layer is baked individually before adding the next layer. This can take several hours to complete, as each layer must be baked for a short period of time until it is fully cooked.

Here’s a recipe for Lapis Legit:

Ingredients:

  • 500g unsalted butter, at room temperature
  • 500g granulated sugar
  • 500g all-purpose flour
  • 20 egg yolks
  • 10 egg whites
  • 2 tsp cinnamon powder
  • 1 tsp cardamom powder
  • 1 tsp cloves powder
  • 1/2 tsp nutmeg powder
  • 1/2 tsp vanilla extract

Preparation:

  1. Preheat the oven to 350°F (180°C) and grease a 9-inch square baking pan.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Gradually add the egg yolks, one at a time, mixing well after each addition.
  4. Sift the flour into the mixture and stir until just combined.
  5. In a separate mixing bowl, whisk the egg whites until stiff peaks form.
  6. Gently fold the egg whites into the batter until fully incorporated.
  7. Divide the batter into 8 equal portions.
  8. In a small bowl, mix together the cinnamon powder, cardamom powder, cloves powder, nutmeg powder, and vanilla extract.
  9. Add 1 tsp of the spice mixture to the first portion of batter and mix well.
  10. Pour the batter into the prepared pan and bake for 8-10 minutes, or until the top is lightly golden brown.
  11. Repeat with the remaining portions of batter, adding 1 tsp of the spice mixture to each portion.
  12. Once all the layers are baked, let the cake cool completely before slicing and serving.

Lapis Legit can be stored in an airtight container at room temperature for up to a week, or in the refrigerator for up to two weeks.
