One of the great Jamaican side dishes are Bammies which are a patty mix of sweet cassava, and coconut milk. It works so well with rice and peas. Really good with fish but also served with Jerk Chicken as well.
Ingredients:
- 1 tin coconut milk
- 1lb. sweet cassava
- pinch of salt
- 1 tbsp vegetable oil for frying – sunflower or corn is good
Preparation:
- Peel the cassava tuber.
- In a food blender, grate the cassava to form a wet mass.
- Place the grated cassava in a muslin bag and wring out the juice.
- Add salt
- Divide the mixture into 6 portions and flatten on a kitchen work surface.
- Heat a frying pan or skillet with some vegetable oil
- Fry each bammy on a medium heat for 10 minutes until they are reasonably firm but not necessarily brown.
- Remove from the pan and soak in the coconut milk for 5 minutes at least.
- Put the bammies in the pan and fry until light brown.

We had this today for Xmas eve. Right on Christmas Eve feasting and with chicken patties!
