Coconut Burfi

 

Ingredients:

  • 2 cups grated fresh coconut
  • 1 cup/250g caster sugar
  • 1/2 cup/100ml fresh cream
  • pinch of cardamom powder
  • 2 tablespoons powdered/icing sugar
  • 1/2 tablespoon ghee
  • 1 tablespoon chocolate powder (optional)

Preparation:

  1. Heat a non-stick pan on medium heat.
  2. Add the cream, coconut, sugar and cardamom powder. Cook continuously for 15 minutes or until the mixture turns golden brown.
  3. Remove from the heat and add the powdered/icing sugar. Mix thoroughly.
  4. Grease a thali with ghee and pour in the coconut mixture. Spread evenly.
  5. Cool and cut into diamonds or squares.

Store in an airtight container in the fridge for up to a week.
