I like the idea of using what is a relatively tough leaf in combination with sweet apple and earthy beetroot with extra sweetness from the raisins.
Ingredients:
- 1 bunch of kale, stems removed and leaves finely chopped
- 1 medium-sized beetroot, peeled and grated
- 1 medium-sized apple, cored and diced
- 1/2 cup walnuts, chopped
- 1/2 cup raisins
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Preparation:
- Start by preparing the kale. Remove the stems and chop the leaves into bite-sized pieces. Rinse thoroughly and dry using a salad spinner or paper towels.
