Vietnamese Spinach and Tofu Soup

An interesting vietnamese dish is spinach and tofu soup which is also known as canh cai bo xoi nau dau phu. This soup uses cotton tofu and spinach in a tasty chicken broth.

Serves 4; preparation time: 5 minutes; Cooking time: 5 minutes if that.

Ingredients:

  • 4-5 block of cotton tofu, cut into chunks
  • 400g spinach
  • 800ml chicken stock
  • 2 tablespoons soy sauce
  • 1/4 tsp ground black pepper

Preparation:

  1. Bring the chicken stock to a boil in a large stockpot or heavy bottomed saucepan.
  2. Add all the tofu and cook for two minutes.
  3. Add the spinach and briefly bring to a boil.
  4. serve in bowls with ground black pepper.
