Vada

Vadas are doughnuts which are often served along with idlis, a coconut chutney and a sambar (sambhar). A plate of vadas is often served as a meal although smaller amounts are great as snacks.  The vada  comes from southern India like the accompaniments. You will not find it served with a dosa because they are similar in context.

There are many different types. The two popular variants of the recipe are Uzhunnu Vada  which is made with Black Gram (Urad Dal) and Parippu Vada  which is made with Chana Dal.

It is always crispy, delicious and served hot.

A typical recipe:-

Ingredients:

  • 1/2 cup Urad Daal (Black Gram/black lentils)
  • 1 Onion, finely chopped
  • 1 tsp Ginger
  • 1 or 2 Green Chillies which are finely chopped
  • Salt to taste
  • ¼ tsp Baking Soda (sodium bicarbonate)

Preparation:

Pick, wash and soak Urad Dal for 3-4 hours.

Make a smooth paste of the dal by grinding it in wet grinder. Make sure that you do not add too much water, because it should be a thick paste.

Add onions, ginger, green chilies salt and baking powder to the paste, mix well and set aside for 5 minutes.

Heat oil in a pan or kadhai and deep fry a spoonful of batter until it is golden

Serve with coconut chutney, tamarind chutney or  sambhar.
