Toffee Banana Crumble with Vanilla Custard


For the Toffee Banana Crumble

  • 4 ripe bananas, peeled and sliced
  • 50 grams unsalted butter
  • 100 grams light brown sugar
  • 1 teaspoon vanilla extract
  • 100 grams all-purpose flour
  • 50 grams rolled oats
  • 50 grams chopped nuts (such as almonds or pecans)
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

For the Vanilla Custard

  • 500 ml whole milk
  • 4 egg yolks
  • 100 grams caster sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract


1. Prepare the Toffee Banana Crumble:

  1. Preheat your oven to 180°C (350°F).
  2. In a large skillet or frying pan, melt the unsalted butter over medium heat.
  3. Add the sliced bananas and cook for 2-3 minutes, stirring gently, until slightly caramelized.
  4. Sprinkle the light brown sugar over the bananas and stir gently until the sugar melts and forms a toffee-like sauce with the butter.
  5. Stir in the vanilla extract and remove from heat.
  6. In a separate bowl, combine the all-purpose flour, rolled oats, chopped nuts, ground cinnamon, and a pinch of salt.
  7. Add the toffee banana mixture to a baking dish or individual ramekins.
  8. Sprinkle the crumble topping evenly over the bananas.

2. Bake the Toffee Banana Crumble:

  1. Place the baking dish or ramekins in the preheated oven.
  2. Bake for 25-30 minutes, or until the crumble topping is golden brown and crisp.
  3. Remove from the oven and let it cool slightly before serving.

3. Make the Vanilla Custard:

  1. In a saucepan, heat the whole milk over medium heat until it just begins to simmer. Remove from heat.
  2. In a separate bowl, whisk together the egg yolks, caster sugar, and cornstarch until well combined and slightly thickened.
  3. Gradually pour the hot milk into the egg mixture, whisking constantly, to temper the eggs.
  4. Return the mixture to the saucepan and cook over low heat, stirring constantly with a wooden spoon or whisk, until the custard thickens enough to coat the back of the spoon.
  5. Remove from heat and stir in the vanilla extract.
  6. Strain the custard through a fine sieve into a clean bowl to remove any lumps.

4. Serve

  1. Divide the warm toffee banana crumble among serving plates or bowls.
  2. Drizzle with vanilla custard over the crumble.
