Serves 6; Preparation time: 15 minutes; Cooking time: 15 to 20 minutes.
Ingredients:
- 2 lean pork chops or loin steaks with the fat removed
- 1 tbsp tikka spice powder
- 250g new small potatoes
- 1 small red onion, peeled and sliced
- 50g baby spinach leaves, rinsed
- 1 tbsp tomato ketchup
- 1 tbsp honey
- 1 tbsp water
- 3 tbsp natural yogurt – could be low fat too for a spicy dip
Preparation:
- Boil the potatoes until they are soft for between 15 and 20 minutes. Drain and set aside to cool.
- Rub the pork with 2 tsp of the tikka spice. Cook under a preheated moderate grill for 80 to 10 minutes on each side.
- Transfer the potatoes to a medium bowl and add the onion, spinach, 1 tsp of the tikka spice, tomato ketchup, honey and water.
- Prepare a spicy yogurt dip my mixing yogurt with some of the tikka spices.
- Serve the pork with a potato salad and the spicy yogurt dip.
