History of Brie
Brie is one of France’s most famous cheeses, often called the “Queen of Cheeses.” It originates from the Île-de-France region, particularly Seine-et-Marne, and has been produced for over a thousand years.
- Medieval Origins: It was enjoyed in French royal courts as early as the 8th century and was favored by Charlemagne.
- 18th Century Recognition: At the Congress of Vienna in 1815, Brie was declared the best cheese in the world in a diplomatic contest.
- Protected Names: While “Brie” is a widely used name, only Brie de Meaux and Brie de Melun have AOC (Appellation d’Origine Contrôlée) status, meaning they must be traditionally made in specific regions of France.
How Brie is Made
1. Milk & Curd Formation
- Traditional Brie is made from raw cow’s milk (though pasteurized versions exist).
- Milk is heated and combined with rennet to form curds, which are gently cut and ladled into molds.
2. Draining & Salting
- The cheese is drained naturally without pressing, giving it a soft texture.
- Salt is sprinkled on the surface to help develop flavor and control bacteria.
3. Aging & Maturation
- Brie is aged for 4–8 weeks in humid cellars, where it develops its white bloomy rind (Penicillium candidum mold).
- Brie de Melun ages longer and has a stronger, earthier flavor than Brie de Meaux.
