Stracciatella Meringue Cake

Stracciatella Meringue Cake is a classic meringue dessert which is combined with cake to make a delicious set of afters.

Serves: 14 portions


  • 270g/9 oz. finely chopped white chocolate
  • 200ml/1 cup whipping cream
  • 1 tbsp honey
  • 300g/5 cups whipped cream
  • 200g/7 oz. dark chocolate – grated
  • 2 meringue bases – ready-made, about 8 inches (20cm) in diameter


  1. Place the white chocolate in a bowl.
  2. Heat a saucepan on a low heat. Add the cream, pour over the white chocolate and leave for 5 minutes to heat through.
  3. Add the honey, mix in to form a smooth chocolate paste
  4. Cool overnight in the refrigerator.
  5. Stir the whipped cream gently using a plastic spatula and mix in the grated dark chocolate. Do not over mix otherwise it deaerates the mixture.
  6. Spread half the white chocolate paste onto the top of the first meringue base. Spread the remaining chocolate paste on top of that.
  7. Put the second meringue base on that top.
