Sandwich Fillers

Sandwich fillers say as much about us as the sandwich. Here we have a few choice fillings which we’ve reproduced from some famous retailers. Don’t forget the bread! Whilst white bread is still the nation’s favourite, malt bread is even better for sandwiches because it opens up the possibility of extra flavour and it wont go wet as soon as sniff a dollop of mayo.

Looking at the sandwich fillers, the own-label retailers such as Tescos and Morrisons produce a fantastic range which seems unique to them. The chicken and bacon mayo filling is one that seems easy to reproduce but you could pimp it up by adding a few slivers of cooked garlic which gives it a slightly French feel.

Serving 4 sandwiches

Tesco Chicken & Bacon Mayonnaise

Ingredients:

  • 1 Tbsp frying oil – sunflower
  • 50g chicken breast, sliced into sections – ready cooked is ideal but you may have to fry the uncooked chicken.
  • 25g beechwood smoked bacon, sliced into bits
  • 4 Tbsp mayonnaise – ideally full fat but half-fat is good for slimming. Hellmann’s is still one of the best.
  • 1 tsp runny honey (optional)
  • 1 pinch ground black pepper 
  • salt to taste
  • sliced malt bread

Preparation:

  1. In a large frying pan, add sunflower oil – just enough to allow the bacon pieces to fry and heat up the oil on a medium setting.
  2. Add the bacon pieces and fry until they start to brown. Remove from the pan and keep to one side.
  3. Then add the chicken pieces to the remaining fat if it is uncooked. Make sure the chicken is cooked through and is also slightly browned and soaks up that oozy bacon fat.  You have to pat dry between kitchen paper if it is too oily though.
  4. Take all the meat out of the pan and mix with the mayonnaise in a medium bowl. Try not to mix it such that the pieces fall apart.
  5. Add honey to lend a sweetness if desired but make sure some salt and black pepper is added for taste.
  6. Coat one side of the malted bread so that it is 5mm thick. Put the other slice of bread on and just munch away.

Tesco Chicken & Sweetcorn

Ingredients:

  • 1 Tbsp frying oil – sunflower
  • 50g chicken breast with and without skin, sliced into sections – ready cooked is ideal but you may have to fry the uncooked chicken.
  • 25g sweetcorn – ready cooked
  • 4 Tbsp mayonnaise – ideally full fat but half-fat is good for slimming
  • 1/2 tsp mustard
  • 1 pinch ground black pepper 
  • salt to taste
  • sliced malt bread

Preparation:

  1. If you are cooking the chicken, then just heat up a few slices in a large frying pan, which a small amount of sunflower oil – on a medium setting. Make sure the chicken is cooked through and is also slightly browned. It may need patting with kitchen towel paper if it is too fatty.  
  2. Take all the chicken out of the pan and mix with the mayonnaise in a medium bowl. Try not to mix it such that the pieces fall apart.
  3. Season with some salt and black pepper for taste. Add some mustard to the mayonnaise mix if needs be.
  4. Coat one side of the malted bread so that it is 5mm thick. Put the other slice of bread on and also just munch away.

Co-Op Tuna Mayonnaise

Ingredients:

  • 3 tbsp. mayonnaise – full fat
  • 210g canned tuna chunks in brine or spring water, drained and flaked with a fork
  • pinch of black pepper – no need for salt
  • sliced oatmeal bread

Preparation:

  1. Thoroughly drain the can of tuna chunks using a fine sieve.
  2. Empty dry tuna chunks into a mixing bowl, using a fork to break down the chunks into a flake texture.  Small pieces are no issue.
  3. To the mixing bowl, add two tablespoons of mayonnaise and mix in with the tuna thoroughly – at this stage season with black pepper if desired
  4. Before serving, cover bowl with clingfilm and refrigerate for up to 2 hours so the mixture has time to settle and blend together.

Sainsbury’s Prawn Mayonnaise

Ingredients:

  • 3 tbsp. mayonnaise – full fat
  • 250g cooked peeled prawns – usually from a can and drained although the vacuum packed product usually has a fresher quality.
  • pinch of black pepper – no need for salt
  • sliced oatmeal bread

Preparation:

  1. Thoroughly drain the prawns and place in a bowl.
  2. To the mixing bowl, add three tablespoons of mayonnaise and mix in with the prawns thoroughly – you can add at this stage season with black pepper if desired
  3. Spread the prawn mayonnaise on one side of the oatmeal bread.
