A refreshing and unusual salad made with green papaya shreds. Enjoy this one with seafood especially prawns and shrimps. We have it with other spicy dishes where its fruity simple lightness adds so much pazazz to the dinner.
The sesame seeds are dry roasted by heating in a hot pan for 10 minutes until browned and smelling.

Preparation time: 15 minutes
Ingredients for a Green Papaya Salad:
- 1 large ripe tomato, cut into wedges
- 1 green papaya (about 500g/1 lb) which is coarsely grated to produce about 3 cups
- 1 small carrot also coarsely grated to producing a cup
- 2 tablespoons mint leaves – cut finely
- sprigs of mint leaves with garnish
Dressing:
- 3 tablespoons lime juice – freshly squeezed
- 3 tablespoons fish sauce
- 1 tbsp caster sugar
- 2 garlic cloves, chopped finely, even minced
- large chili, deseeded and sliced
- 2 tablespoons dry-roasted sesame seeds (see earlier)
Preparation:
- Put all the ingredients for the dressing in a large bowl and mix. Keep mixing until all the sugar has dissolved and all are combined well.
- Add the mint leaves and mix thoroughly too by tossing.
- Place on a platter and garnish with sprigs of mint. Serve immediately.
