Cardamom lassi is one of the favourite drinks of the Punjab. It makes great use of cardamoms and we may have made a Punjabi garam masala which is so redolent but NOT reeking of this particular flavour and in a polite way too. I think cardamom is so versatile because it flavours not just lassi but many sweets, mithais and halwas.
The lassi is a drink made with beaten curds and milk. Drink any time of the day. In India, it is drunk at breakfast in place of Horlicks where it is best eaten with a hot paratha. I know we can add any flavour or spice we like as long as we don’t overpower it too much – let that cardamom shine through.
Makes 4 glasses; Preparation time: 1 -2 minutes & no cooking needed.
Ingredients:
- 2 cups fresh curds (dahi) from full fat milk
- 1 cup full fat milk
- 8 tsp caster sugar or granulated sugar
- 2 tsp cardamom (elaichi) powder
- 4 o5 ice cubes for serving
Preparation:
- Combine all the ingredients save for the ice cubes and blend in a mixer for 2-3 minutes.
- Pour into 4 individual glasses and serve with ice immediately.
