Spinach, Red Pepper and Feta Cheese Quiche – An easy quiche to make for a summer’s day. This quiche is a stand-out for many of us who enjoy quiche and what it represents. You can of course make your own short crust pastry or use the version in the recipe below which really is taking you to your roots.
Serves: 6
Ingredients:
- 1 store-bought or homemade short-crust or pie crust pastry see below
- 1 red pepper, diced
- 2 cups fresh spinach
- 4 large eggs
- 1 cup milk
- Salt and pepper to taste
- 1 cup crumbled Feta cheese
For the crust:
- 1 ½ cups all-purpose flour
- ½ cup cold unsalted butter, cubed
- Pinch of salt
- 4-6 tablespoons cold water
Preparation:
Prepare the Crust:

- In a large mixing bowl, combine the flour and salt.
- Add the cold cubed butter to the flour mixture and use a pastry cutter or fork to cut the butter into the flour until the mixture resembles coarse crumbs.
- Gradually add cold water, 1 tablespoon at a time, mixing with a fork until the dough comes together and forms a ball.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Making The Filling:
- Preheat your oven to 375°F (190°C).
- Roll out a store-bought pie crust or make your own and place it in a 9-inch (23cm) pie dish.
- In a skillet, sauté 1 diced red pepper until it softens, then add 2 cups of fresh spinach and cook until wilted. Remove from heat and let it cool.
- In a mixing bowl, whisk together 4 large eggs and 1 cup of milk. Season with salt and pepper to taste.
- Add the sautéed red pepper and spinach mixture to the egg mixture and stir to combine.
- Crumble 1 cup of Feta cheese and sprinkle it evenly over the bottom of the pie crust.
- Pour the egg mixture over the Feta cheese, ensuring it covers the filling evenly.
- Bake the quiche in the preheated oven for about 35-40 minutes, or until the filling is set and the crust is golden brown.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
