Cheeses from the USA usually conjure up images of Monterrey Jack and various cheddars which come wrapped in cellophane but there is one, just like a cheddar, that deserves special mention – Colby Cheese or Colby Swiss Cheddar. A number of grocers also call it Colby Jack when it is a mixture of Colby and Monterrey Jack cheese. The cheese itself has a soft and elastic consistency which is less crumbly than cheddar. It has always been highly versatile as a cooking cheeses as well as one for the cheese board.
Back in Colby, Wisconsin, 1874, Joseph F. Steinwand is supposed to have identified a way of producing his own Cheddar at his father’s cheese producing factory. Colby was a young town, barely three years old, when Ulysses S. Grant was the US President.
The cheese is a semi-hard, open type which is milder, slightly softer than conventional cheddar. It requires about a gallon of milk to create one pound of cheese. In fact it is prepared by the conventional cheddaring method but diverges from this process using the washed-curd process. Here water replaces whey during the cooking step which reduces the curd’s acidity making the proteins less rigid and tangy, in fact quite elastic and producing the mild flavour. As the cheese ages, it cracks as it dries so it is usually eaten relatively fresh. The cheese is cut into half rounds and rectangles.
Unlike Monterey Jack, Colby cheese is almost the same except that it is coloured yellow/orange with annatto giving it a sweet nutty flavour. There is a type called Longhorn which is a cylindrical variant and the one I’ve selected as possibly the best is Weyauwega Star Dairy in that traditional cheese producing state of Wisconsin. Usually supplied as a 1 pound wheelThis has a gentle and nutty flavour.
One of the finest producers of dairy foods generally, and Colby Jack is Oregon’s own great Tillamook Dairy which produces a 32 oz. block for grating. If I saw this on offer in the UK, I would certainly be after this particular delicious cheese for my own cheeseboard.
Sadly, the cheese is no longer produced at Colby but they do celebrate it in the annual cheese festival around mid-July. It is manufactured now by Pinconning Cheese Co.
The cheese is said to be best eaten with Cabernet Sauvignon and Shiraz wines. As with any cheese, pair with walnuts, apple chunks and pears, or grace the American charcuterie board because it now rivals cheddar as the cheese of the nation.

1️⃣ Prepare the ingredients: Grate the Colby cheese and chop the onion and jalapeño.
2️⃣ Assemble the quesadillas: Sprinkle half of the cheese on one tortilla. Add jalapeño slices, red onion, and a dash of smoked paprika. Top with the remaining cheese and cover with another tortilla.
3️⃣ Cook: Heat butter in a frying pan over medium heat. Place the quesadilla in the pan and cook for 3-4 minutes per side, until golden brown and crispy.
4️⃣ Serve: Cut into wedges and serve with salsa, sour cream, or guacamole.
Tip: Add cooked chicken or black beans for extra protein!
2. Creamy Colby Cheese & Garlic Mashed Potatoes
A cheesy, creamy mashed potato dish that’s perfect as a side for steak, grilled chicken, or roasted vegetables.
Ingredients
- 2 large potatoes, peeled and cubed
- 50g (1.75 oz) Colby cheese, grated
- 2 tbsp butter
- ¼ cup (60ml) milk
- 1 garlic clove, minced
- Salt & black pepper, to taste
- 1 tbsp chopped chives (optional, for garnish)

3. Colby Cheese & Spinach Stuffed Chicken Breasts
A juicy chicken breast stuffed with creamy Colby cheese and spinach, then baked to perfection!
Ingredients:
- 2 boneless, skinless chicken breasts
- 60g (2 oz) Colby cheese, grated
- ½ cup fresh spinach, chopped
- 1 small garlic clove, minced
- 1 tbsp cream cheese (optional for extra creaminess)
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil

4. Colby Cheese & Broccoli Mac & Cheese
A creamy, cheesy mac & cheese with Colby cheese and broccoli for a comforting yet balanced meal.
Ingredients:
- 150g (5 oz) elbow macaroni
- 100g (3.5 oz) Colby cheese, grated
- 1 tbsp butter
- 1 tbsp all-purpose flour
- 1 cup (240ml) milk
- ½ tsp Dijon mustard (optional for flavor)
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup broccoli florets, steamed
