Vietnamese Crabmeat Omelette

Vietnamese crabmeat omelette is an easy dish to prepare. Omelettes are great vehicles for fillings and this version is excellent with crabmeat. However, an omelette is just as yummy with cooked ground or minced pork rather than just crab. Some ripe tomatoes also add a bit of flavour to this.

Serves 3 or 4

Preparation: 5 minutes Cooking time: 10 minutes

Ingredients:

  • 3 shallots, finely chopped
  • 140g/4 1/2oz./ 1 cup cooked crabmeat
  • 4 eggs, beaten
  • 2 tsps fish sauce
  • 1 spring onion, finley sliced
  • 1/4 tsp freshly ground black pepper
  • coriander leaves for garnish
  • 4 tbsp vegetable oil

Preparation:

  1. Heat the oil in a wok or skillet on a medium to high heat. Stir-fry the shallots for 1 or 2 minutes until they create their aroma and have softened and translucent.
  2. Add the crabmeat, mix well and transfer to a mixing bowl.
  3. Add the fish sauce, spring onion, pepper and eggs into the crabmeat mixture. Mix thoroughly.
  4. heat any remaining oil in the wok over a medium heat. Allow the pan to get hot and add the egg mixture. Cook for up to 5 minutes but will be close to 3. Allow to get crispy and golden yellow.
  5. Turn the omelette over in the frying pan or wok and cook in a similar manner.
  6. Use a wide spatula to take the omelette out of the pan.
  7. Put the omelette onto a plate and garnish with coriander leaves.
