A simple formulation for a pulpy fruit drink will involve fruit pulp, water, a sweetener and a stabilizing agent. The preferred stabilisers are gums such as pectin and xanthan although combinations of these with carrageenan have also been tried. Adding a gum also increases viscosity and makes for a valuable mouthfeel agent.
