Stuffed Gözleme

Here’s a delicious recipe for making Stuffed Gözleme for two people (makes 2 gözleme) — a savory Turkish flatbread traditionally filled with ingredients like spinach, cheese, and spiced meat. This version includes two popular fillings and can easily be adapted.


Stuffed Gözleme for Two (Makes 2 Large Pieces)

Times

  • Prep time: 15 minutes

  • Resting time (for dough): 30 minutes

  • Cooking time: 10–12 minutes

Equipment Needed

  • Mixing bowl

  • Rolling pin

  • Large skillet or non-stick frying pan

  • Pastry brush

Ingredients

For the Dough

Ingredient Amount
All-purpose flour 200g (~1⅓ cups)
Warm water 100ml (~⅓ cup + 1 tbsp)
Salt ½ tsp
Olive oil 1 tbsp (optional for softer dough)

Filling Options (choose one or split)

Option 1: Cheese & Spinach

  • 75g crumbled feta or Turkish white cheese

  • 1 small handful fresh spinach, chopped

  • 1 tsp olive oil

  • Pinch of black pepper and chili flakes

Option 2: Spiced Lamb

  • 100g minced lamb

  • ½ small onion, finely chopped

  • ½ tsp ground cumin

  • ¼ tsp paprika or Aleppo pepper

  • Salt and pepper to taste

  • 1 tsp olive oil


Preparation

1. Prepare the Dough

  1. In a bowl, mix the flour, salt, and olive oil (if using).

  2. Gradually add warm water and mix to form a soft dough.

  3. Knead for 8–10 minutes until smooth.

  4. Cover and let rest for 30 minutes.


2. Prepare the Filling(s)

Cheese & Spinach:

  • Mix chopped spinach, crumbled cheese, olive oil, and seasoning in a bowl.

Spiced Lamb:

  • Heat olive oil in a small pan, add onion and cook until soft.

  • Add minced lamb and spices. Cook until browned and fully cooked (5–7 mins).

  • Let it cool slightly.


3. Roll and Fill the Gözleme

  1. Divide dough into 2 equal balls.

  2. Roll each ball into a thin oval or rectangle (~30 cm / 12 inches wide).

  3. Place filling over half of the dough, leaving a 1 cm border.

  4. Fold the other half over the top to enclose and seal the edges by pressing or crimping.


4. Cook

  1. Heat a dry skillet or pan over medium heat.

  2. Place one gözleme on the pan and cook for 2–3 minutes per side, until golden with brown spots.

  3. Brush lightly with olive oil or melted butter after cooking, if desired.

  4. Repeat for the second gözleme.


Serve

  • Cut into quarters or halves.

  • Serve hot with lemon wedges, ayran (Turkish yogurt drink), or a side salad.
