Spiced Apple and Pear Chutney

A recipe for Spiced Apple and Pear Chutney with sultanas and a blend of warming spices:

Ingredients:

3 apples (e.g., Granny Smith or Fuji), peeled, cored, and diced
3 ripe pears, peeled, cored, and diced
1 cup sultanas (golden raisins)
1 cup brown sugar
1 cup white vinegar
1 small onion, finely chopped
1-inch piece of fresh ginger, minced
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground coriander
1/2 teaspoon caraway seeds
1/2 teaspoon fennel seeds
1/4 teaspoon ground clove powder
1/4 teaspoon ground turmeric
1/4 teaspoon salt
Pinch of red pepper flakes (optional for a bit of heat)
Instructions:

Prepare the Fruits:

Peel, core, and dice the apples and pears. Place them in a large bowl.
Combine Ingredients:

In a large, heavy-bottomed saucepan, combine the diced apples, pears, sultanas, chopped onion, and white vinegar.
Add the Spices:

Add all the spices to the mixture: ground cinnamon, ground nutmeg, ground coriander, caraway seeds, fennel seeds, ground clove powder, ground turmeric, salt, and the optional pinch of red pepper flakes for a bit of heat.
Cook Over Medium Heat:

Place the saucepan over medium heat and bring the mixture to a gentle boil.
Simmer and Stir:

Reduce the heat to low and let the mixture simmer. Stir occasionally to prevent sticking and to ensure even cooking. The chutney will thicken as it cooks.
Cook Until Thickened:

Continue simmering and stirring for about 45 minutes to 1 hour, or until the chutney has thickened and the fruits have softened.
Taste and Adjust:

Taste the chutney and adjust the seasoning if needed. You can add more sugar for sweetness or more spices for flavor, according to your preference.
Cool and Store:

Remove the chutney from the heat and allow it to cool to room temperature.
Transfer to Jars:

Once the chutney has cooled, transfer it to sterilized, airtight glass jars or containers. Make sure to fill the jars while the chutney is still slightly warm.
Seal and Store:

Seal the jars or containers and store them in a cool, dark place for about a week to allow the flavors to meld and mature. Afterward, the chutney is ready to use.
Serve:

Serve your Spiced Apple and Pear Chutney as a condiment with cheese, roasted meats, sandwiches, or as a flavorful accompaniment to a variety of dishes.
Enjoy:

Enjoy the delicious blend of sweet and savory flavors in your homemade chutney!
This spiced apple and pear chutney is a versatile condiment with a delightful combination of sweet and savory notes, making it a perfect addition to your culinary creations or as a thoughtful gift for friends and family.
