Salad of Beans, Melon & Halloumi Cheese

Serves 4; Preparation time; 10 minutes.

Ingredients:

  • 1 cup or a 1/2 can (200g) black beans 
  • 1 cup couscous
  • 1 cup aduki beans
  • 1/2 melon, diced
  • 2 spring onions, finely sliced
  • 1/2 lemon, juiced
  • 1 tbsp. olive oil
  • a small bunch of mint, roughly chopped
  • 250g halloumi cheese, sliced
  • 1 tbsp balsamic vinegar

Preparation:

  1. If using dry beans, soak the beans overnight or for 12 hours.
  2. Place in a large pan and cover with water. Bring to the boil and simmer for one hour. Drain and place in a large bowl.
  3. Prepare couscous as stated on the packaging.
  4. In a bowl, add the spring onion, melon with olive oil and lemon juice and toss.
  5. Grill the halloumi cheese to a golden colour. 
  6. Scatter the mint over the bean mixture and place the halloumi on top. Drizzle with balsamic vinegar.
