Serves 4; Preparation time; 10 minutes.
Ingredients:
- 1 cup or a 1/2 can (200g) black beans
- 1 cup couscous
- 1 cup aduki beans
- 1/2 melon, diced
- 2 spring onions, finely sliced
- 1/2 lemon, juiced
- 1 tbsp. olive oil
- a small bunch of mint, roughly chopped
- 250g halloumi cheese, sliced
- 1 tbsp balsamic vinegar
Preparation:
- If using dry beans, soak the beans overnight or for 12 hours.
- Place in a large pan and cover with water. Bring to the boil and simmer for one hour. Drain and place in a large bowl.
- Prepare couscous as stated on the packaging.
- In a bowl, add the spring onion, melon with olive oil and lemon juice and toss.
- Grill the halloumi cheese to a golden colour.
- Scatter the mint over the bean mixture and place the halloumi on top. Drizzle with balsamic vinegar.
