Ingredients
For the Roast Pork:
- 200g roast pork, sliced thinly
- 1 tbsp soy sauce
- 1/2 tbsp hoisin sauce
- 1/2 tbsp honey

- 150g chow mein noodles
- 1 tbsp vegetable oil

- 1 tbsp light soy sauce
- 1/2 tbsp dark soy sauce
- 1/2 tsp sesame oil

Preparation
- Marinate the Pork: In a small bowl, mix the soy sauce, hoisin sauce, and honey. Coat the roast pork slices in this marinade and set aside for about 10 minutes.
- Prepare the Noodles: Cook the chow mein noodles in boiling water according to package instructions (about 3-4 minutes). Drain and rinse with cold water to stop cooking, then set aside.
Cooking
- Cook the Pork: Heat 1/2 tbsp of vegetable oil in the wok over medium-high heat. Add the marinated pork slices and stir-fry for 2-3 minutes until they are slightly caramelized. Remove from the wok and set aside.
- Stir-Fry the Vegetables: In the same wok, add the remaining oil. Add the onion, bell pepper, carrot, and garlic, and stir-fry for about 2-3 minutes until the vegetables begin to soften.
- Combine: Add the noodles to the wok along with the pork, bean sprouts, and spring onions. Toss everything together.
- Season: Pour in the light soy sauce, dark soy sauce, and sesame oil. Toss until evenly coated and heated through. Season with salt and pepper to taste.
- Serve: Divide between two plates and serve immediately.
