Preparing a Classic Italian Dressing

The famous classic of the Italian dressing graces any salad it is added to.

Ingredients

  • 3/4 cup extra-virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste

Preparation

  1. Combine Ingredients:
    • In a medium bowl or a jar with a lid, combine the olive oil, red wine vinegar, Dijon mustard, and honey.
  2. Add Herbs and Spices:
    • Add the minced garlic, dried oregano, dried basil, dried thyme, dried parsley, and red pepper flakes (if using).
  3. Season:
    • Season with salt and freshly ground black pepper to taste.
  4. Mix or Shake:
    • Whisk together all the ingredients until well combined, or if using a jar, put the lid on and shake vigorously until the dressing is well mixed.
  5. Taste and Adjust:
    • Taste the dressing and adjust the seasoning if necessary. You may want to add a bit more vinegar for tanginess or more honey for sweetness.
  6. Store:
    • Store the dressing in the refrigerator in a sealed container. It should last for about a week.
  7. Serve:
    • Before serving, give the dressing a good shake or whisk as the ingredients might separate over time.

Suggestions & Tips

  • For a creamier texture, you can add a tablespoon of grated Parmesan cheese.
  • Fresh herbs can be used instead of dried ones; just use three times the amount of fresh herbs.
  • If you prefer a milder garlic flavor, you can use roasted garlic instead of raw.
