Prawns and scallops fettucine is an easy Italian dish to prepare.

Serves; 4-6: Preparation time: 8-10 minutes; Cooking time: 20 minutes

Ingredients:

  • 500g fettuccine
  • 3 tbsp butter
  • 1 tbsp double or heavy cream
  • 150g  prawns or shrimps – cleaned and fully deveined 
  • 100g scallops – fresh as possible
  • 1 cup Parmesan cheese, shredded with more for garnish
  • Salt and freshly ground black pepper
  • 2 tbsp chopped fresh flat leaf parsley, for garnish

Method:

  1. In a large pot of salted water, cook pasta according to package directions. Reserve some cooking water before draining.
  2. Melt butter over medium-low heat in a large skillet. Add cream and stir until mixture begins bubble and thicken, 2-3 minutes. 
  3. Add cheese and reduce heat to low and cook for 2 minutes. It should start to thicken.
  4. Add the prawns and cook for 3 minutes until pink or cooked through to just pink, add the scallops and cook for a minute. The key is to prevent these scallops going rubbery. 
  5. Cook, stirring, until thickened, 2 minutes. Season with salt and pepper. 
  6. Remove from heat, add pasta and stir until coated. If necessary, add cooking water, 1 tablespoon at a time, to thin the sauce and help it coat.
  7. Serve immediately garnished with parsley.
