Potato Apple Rosti with smoked pastrami salmon and horseradish sauce

Ingredients

For the Rösti

  • 2 medium potatoes, peeled and grated
  • 1 apple, peeled and grated
  • 1 small onion, finely chopped
  • 1 egg, beaten
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 2 tablespoons butter or oil for frying

For the Smoked Pastrami Salmon

  • 200g smoked pastrami salmon, thinly sliced

For the Horseradish Sauce

  • 3 tablespoons sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon prepared horseradish (more to taste)
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Preparation

  1. Prepare the Rösti
    • Place the grated potatoes and apple in a clean kitchen towel and squeeze out as much liquid as possible.
    • In a large bowl, combine the grated potatoes, apple, chopped onion, beaten egg, and flour. Mix well and season with salt and pepper.
    • Heat the butter or oil in a large skillet over medium heat.
    • Form the potato mixture into small patties or one large one (about 4-5 inches in diameter for individual patties).
    • Fry the rösti patties in the skillet for about 4-5 minutes on each side, or until golden brown and crispy. Adjust the heat as needed to avoid burning.
  2. Prepare the Horseradish Sauce:
    • In a small bowl, combine the sour cream, mayonnaise, prepared horseradish, and lemon juice. Mix well.
    • Season with salt and pepper to taste. Adjust the amount of horseradish based on your preference for spiciness.
  3. Assemble the Dish:
    • Place the cooked rösti on a plate.
    • Arrange the smoked pastrami salmon slices on top of the rösti.
  4. Serve:
    • Drizzle the horseradish sauce over the salmon and rösti.
    • Serve immediately, garnished with fresh dill or chives if desired.
