Potato and sardine make great companions especially with their flavour. It needs salt and citrus notes to bring out the best of this salad beauty.
Serves 2; Preparation time: 10 minutes; Cooking time: 15 minutes
Ingredient:
- 450g/1 lb. new baby potatoes
- ½ lemon, juice and zest
- 1 tsp sugar
- 2 tbsp olive oil
- 2 tsp whole grain mustard
- 2 cans of sardines, drained
- ½ jar green pitted olives, drained
- handful of baby salad leaves
- a bunch of parsley, chopped
- salt and black pepper to taste
Preparation:
- To a pot, place the potatoes in enough cold water to cover them and bring to a gentle simmering boil. Cook until the potatoes are just tender, about 15 minutes. Drain and set aside to cool
- When the potatoes have cooled, slice each one in half and use as they are still warm in the middle.
- in a large bowl, add all the ingredients. Whisk the lemon zest, lemon juice, sugar, olive oil and mustard. season to taste with pepper and salt.
- add the boiled potatoes ad sardines and mix together.
- Let the potatoes and sardines slightly break up and get crushed together. In this form they are now ideal for soaking up the juices from the dressing.
- Add the chopped parsley, salad leaves and olives. Toss and serve at room temperature.
