Making Spicy and Smoky Sauced Chicken Fajitas with Red and Green Peppers

I love this recipe for chicken fajitas because it has such a smoky piquant sauce to go with it. This is the taste of Mexico and makes use of chicken breast strips marinated with peppers. Make sure you have some floury tortillas to hold it all together. Soooo delicious! Just great for Labor Day.

Servings: 4, Preparation Time: 20 minutes Cooking Time: 15 minutes

Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts, cut into thin strips
  • 2 medium red bell peppers, sliced
  • 2 medium green bell peppers, sliced
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper (adjust for desired heat)
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Juice of 1 lime
  • 8 small flour tortillas
  • Optional toppings: shredded cheese, sour cream, chopped fresh cilantro, salsa

Preparation

  1. Marinate the Chicken: In a bowl, combine the smoked paprika, ground cumin, cayenne pepper, dried oregano, minced garlic, salt, black pepper, and half of the olive oil. Mix well to form a paste. Add the chicken strips to the paste and toss until they are well coated. Allow the chicken to marinate for at least 15 minutes, or refrigerate for up to 2 hours for more flavor.
  2. Prepare the Vegetables: Heat the remaining olive oil in a large skillet over medium-high heat. Add the sliced onion and cook until it starts to soften and turn translucent, about 2-3 minutes. Add the sliced bell peppers and cook for an additional 3-4 minutes, or until the vegetables are slightly tender but still have a crisp texture. Remove the vegetables from the skillet and set aside.
  3. Cook the Chicken: In the same skillet, add the marinated chicken strips. Cook for about 4-5 minutes per side, or until they are cooked through and have a nice char on the edges. Cooking time may vary depending on the thickness of the chicken strips. Squeeze the lime juice over the cooked chicken and mix well.

Assembling the Fajitas:

  1. Warm the flour tortillas according to the package instructions.
  2. To assemble each fajita, place a few pieces of cooked chicken on a tortilla.
  3. Top with the sautéed bell peppers and onions.
  4. Garnish with a dollop of sour cream, a spoonful of salsa or pico de gallo, a sprinkle of shredded cheddar cheese, and chopped cilantro.
  5. Squeeze fresh lime juice over the toppings for an extra burst of flavor.

Serving:

  1. Arrange the assembled fajitas on a serving platter.
  2. Serve with lime wedges on the side.
  3. Encourage your guests to customize their fajitas by adding their preferred toppings.
