Chicken Scallopini

Chicken Scallopini is a delicious and flavorful dish that’s quick to prepare. Here’s a recipe for 4 people.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 1/2 cup chicken broth
  • 1/4 cup dry white wine
  • 1/4 cup fresh lemon juice
  • 1/4 cup capers, drained
  • 1/4 cup chopped fresh parsley

Preparation

  1. Prep the Chicken:
    • Place each chicken breast between two sheets of plastic wrap and gently pound them to an even thickness, about 1/2 inch.
    • Season both sides of the chicken with salt and pepper.
  2. Coat in Flour:
    • Dredge each chicken breast in the flour, shaking off excess.
  3. Cook the Chicken:
    • In a large skillet, heat 1 tablespoon of olive oil and 2 tablespoons of butter over medium-high heat.
    • Cook the chicken breasts for about 4-5 minutes on each side or until golden brown and cooked through. Adjust the heat if needed to prevent burning.
    • Transfer the cooked chicken to a plate and cover with foil to keep warm.
  4. Prepare the Sauce:
    • In the same skillet, add the chicken broth, white wine, lemon juice, and capers.
    • Bring to a simmer, scraping up any browned bits from the bottom of the pan.
    • Let the sauce reduce for about 3-4 minutes.
  5. Finish the Dish:
    • Stir in the remaining 2 tablespoons of butter until melted.
    • Return the cooked chicken to the skillet, spooning the sauce over the top.
    • Cook for an additional 2 minutes to heat the chicken through and allow it to absorb the flavors.
  6. Serve:
    • Garnish the Chicken Scallopini with chopped parsley.
    • Serve the chicken over cooked pasta, rice, or with a side of vegetables.
