How to Prepare Cheezy Pizza with Pepperoni and Sausage

If you enjoy pizza then you will enjoy this cheezy pizza with sausage and pepperoni topping. The pepperoni is always a firm favourite in our household and this version really works well with fried sausage and some robust Italian seasoning. Follow with lager or beer for a night in watching the footie (soccer for the unitiated).

For The Pizza Dough:

  • 300g (10½oz) Tipo 00 flour or pizza flour (strong white flour)
  • 1/2 teaspoon fast action yeast
  • 2 tablespoon olive oil
  • 170ml (6fl oz) water
  • 1/2 teaspoon salt
  1. The dough is prepared by tipping flour, salt and yeasts into a large bowl and make a well in the middle. Pour water and oil into the well and slowly incorporate the flour until you have a soft dough. Tip the dough out on to a lightly floured surface and knead for 5 to 10 minutes. Place back into the bowl, cover and leave to rise for one hour, or overnight in the fridge.
  2. Preheat the oven to 240ºC/220ºC fan/gas mark 8.
  3. Lightly knead the dough again. Divide the dough into two balls and roll out thinly with a rolling pin.
  4. Get the bases ready on two baking trays for the sauce topping.

Ingredients:

For the basic tomato sauce:

  • 100ml passata (tomato base)

For the cheezy sausage and pepperoni topping:

  • 180g-200g cheddar cheese – grated
  • handful grated or shaved parmesan
  • 2 pork sausages – skin removed, crumbled for frying
  • 10 slices to 15 slices of pepperoni
  • handful of basil leaves (optional)
  • 2 cloves of garlic – sliced thinly
  • a liberal sprinkle of Italian seasoning or a a couple of teaspoons of oregano, thyme. I reckon a couple of teaspoons will do.
  • Black pepper to taste

Preparation:

  1. Make the pizza dough as described above and allow to rise.
  2. To a hot pan, add a spoonful of olive oil and fry the sausage meat until it is browned on both sides. Takes about 5 minutes. Season to taste. 
  3. Roll out the dough. On a floured surface, roll out the dough into large rounds, about 25cm across, using a rolling pin. The dough needs to be very thin as it will rise in the oven. Lift the rounds onto two floured baking sheets.
  4. Put the topping on of grated cheese literally all over, sausage pieces and slices pepperoni spread evenly about. Grate over parmesan just to provide a dusting.
  5. Heat the oven to 240ºC/220ºC fan/gas 8 
  6. Put another baking sheet or an upturned baking tray in the oven on the top shelf. Put pizza to cook in at the hottest point of the oven. It is done when the edges turn brown.
  7. Drizzle with olive oil and season. Our version looks slightly too crusty but it should actually appear as if the cheese has melted into the pizza dough.
  8. Garnish with basil leaves and Italian seasonings.
