How to Make Turron

Here’s a recipe for Turron using marcona almonds and ripe bananas (yes Bananas!):

Ingredients:

  • 6 ripe bananas, sliced lengthwise
  • 1/2 cup Marcona almonds, chopped
  • 1/4 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 12-15 lumpia wrappers (spring roll wrappers)
  • 1/4 cup water
  • Oil, for frying

Why not try Yupik marcona almonds for this turron? These are blanched so that they are ideal for cooking and baking with.

Preparation:

  1. In a bowl, mix the chopped marcona almonds, brown sugar, and ground cinnamon until well combined.
  2. Place a slice of banana on each lumpia wrapper and sprinkle the almond mixture on top. Roll the wrapper tightly, tucking the sides in, until you reach the end. Repeat with the rest of the banana slices.
  3. In a small bowl, mix the water and a tablespoon of flour to make a paste. Use this paste to seal the edges of the lumpia wrappers.
  4. Heat the oil in a deep pan or wok over medium-high heat. Once the oil is hot, add the turron in batches and fry until golden brown on all sides. This should take about 3-5 minutes per batch.
  5. Remove the turron from the pan using a slotted spoon and place them on a paper towel-lined plate to drain any excess oil.
