 Ingredients

  • 1½ cups (225g) fresh or frozen sweet cherries, pitted

  • 1 tbsp lemon juice

  • 1½ tbsp honey or sugar (adjust to taste)

  • ½ tsp vanilla extract

  • ⅓ cup (80ml) water

  • Pinch of salt

  • ½ cup (120ml) heavy cream or full-fat Greek yogurt (for a lighter version)

  • Fresh mint or cherry halves for garnish (optional)


 Preparation & Cooking Instructions

  1. Cook the cherries:
    In a small saucepan, combine pitted cherries, lemon juice, honey, vanilla, salt, and water. Simmer over medium heat for 8–10 minutes, or until the cherries are soft and releasing their juice.

  2. Blend:
    Remove from heat and let cool for 5 minutes. Transfer to a blender and purée until smooth. If you want an ultra-smooth texture, strain through a fine mesh sieve into a bowl.

  3. Chill:
    Stir in the cream or yogurt until fully combined. Cover and chill in the refrigerator for at least 2 hours, or until cold.

  4. Serve:
    Stir well before serving. Pour into bowls and garnish with a swirl of cream, mint leaves, or a few cherry halves.
