Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 1/2 cup chicken broth
- 1/4 cup dry white wine
- 1/4 cup fresh lemon juice
- 1/4 cup capers, drained
- 1/4 cup chopped fresh parsley
Preparation
- Prep the Chicken:
- Place each chicken breast between two sheets of plastic wrap and gently pound them to an even thickness, about 1/2 inch.
- Season both sides of the chicken with salt and pepper.
- Coat in Flour:
- Dredge each chicken breast in the flour, shaking off excess.
- Cook the Chicken:
- In a large skillet, heat 1 tablespoon of olive oil and 2 tablespoons of butter over medium-high heat.
- Cook the chicken breasts for about 4-5 minutes on each side or until golden brown and cooked through. Adjust the heat if needed to prevent burning.
