Cheddar Cheese Croquettes Recipe
Ingredients
For the Croquettes
- 1 cup grated cheddar cheese
- 1 cup mashed potatoes (ensure they are smooth and lump-free)
- 1 tablespoon unsalted butter
- 1/4 cup finely chopped green onions (optional)
- Salt and pepper to taste
- 1/4 teaspoon ground nutmeg (optional)
- 1/4 cup all-purpose flour
- 1 large egg, beaten
- 1 cup bread crumbs (Panko or regular)
- Vegetable oil for frying
For the Dipping Sauce
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon honey
- 1 teaspoon lemon juice
- Salt and pepper to taste
Preparation
- Prepare the Croquette Mixture:
- In a large bowl, combine the grated cheddar cheese, mashed potatoes, butter, green onions (if using), salt, pepper, and nutmeg (if using). Mix well until fully combined.
- Form the mixture into 6 equal-sized balls or logs.
- Bread the Croquettes
- Place the flour in one shallow bowl, the beaten egg in another, and the bread crumbs in a third bowl.
- Roll each croquette in the flour, then dip in the beaten egg, and finally coat with bread crumbs. Ensure each croquette is fully coated.
- Place the breaded croquettes on a baking sheet lined with parchment paper.
- Fry the Croquettes
- Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C).
- Either deep fry or shallow fry the croquettes but in batches, ensuring not to overcrowd the fryer or pan. Fry until golden brown and crispy, about 3-4 minutes per side. If you pan-fry then you may end up with a much shallower crust. I think deep frying is best.
- Remove with a slotted spoon and drain on paper towels.
- Prepare the Dipping Sauce
- In a small bowl, whisk together the mayonnaise, Dijon mustard, honey, lemon juice, salt, and pepper.
- Adjust seasoning to taste.
