A healthy and nutrititious way to eat vegetables is something like a cauliflower frittata (Frittata di Cavolfiore) which is simple and easy to make. Also serve it up at the dinner table for guests.
Serves 3-4; Preparation time: 10 – 15 minutes; Cooking time: 20 – 25 minutes.
Ingredients:
- 4 cups or 1 litre of water
- pinch of sea salt and freshly ground black pepper
- 1lb. (450g) cauliflower, cut into large pieces
- 6-7 eggs
- 4 tbsp. grated Parmigiano Reggiano or Gran Padano cheese
- 2 oz./60g cheddar cheese, finely chopped
- 1/2 cup/120ml heavy cream
- 2 tbsp. all-purpose flour
- nutmeg and black pepper- ground to taste
Preparation:
- Bring a pot of salted water to the boil for boiling the cauliflower.
- Add cauliflower pieces to the boiling water. Cook for 10 to 12 minutes or until tender. Drain in colander. Cut into smaller chunks.
- preheat the oven to 390F/200C. Line a baking dish with baking paper.
- In a large bowl, beat the eggs with Parmesan cheese. Add the cheddar cheese, heavy cream, flour, 1 tsp. of salt, pepper and nutmeg. Add the cauliflower and stir well.
- Pour the egg mixture into the baking dish and use a spatula to spread and distribute the egg mixture over the pan’s surface.
- bake for 20 minutes or until the frittata is set – check by lifting the frittata with a fork. The top should be a light golden-brown.
- Allow the frittata to rest for a few minutes.
- Serve with a green salad that is dressed with extra virgin live oil, fresh lemon and salt.
