Cajun cooking is inspirational. This is a fusion using cajun flavours in the shrimp and sausage with Italian pasta. It makes for an interesting and delicious combination. I think it is a recipe that deserves playing around with to get the right combination. Our version is based on ideas from Patout in Louisiana.
Ingredients:
- 12 oz (340g) linguine or your preferred pasta
- 1 lb (450g) large shrimp, peeled and deveined
- 1/2 lb (225g) Andouille sausage, sliced
- 1 bell pepper, thinly sliced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1 cup chicken broth
- 2 tablespoons Cajun seasoning or our blend version
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
- Grated Parmesan cheese (optional)
Preparation:
- Prepare the Pasta:
- Cook the pasta according to the package instructions until al dente. Drain and set aside.
- Season the Shrimp:
- In a bowl, toss the shrimp with Cajun seasoning, paprika, and a pinch of salt. Ensure that the shrimp are well coated.
- Sear the Sausage and Shrimp:
- In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Sear the sliced Andouille sausage until browned on both sides. Remove the sausage from the pan and set aside.
- In the same skillet, add another tablespoon of olive oil. Add the seasoned shrimp and cook for 2-3 minutes on each side until they turn pink. Remove the shrimp from the skillet and set aside.
- Saute Vegetables:
- In the same skillet, add the chopped onion, bell pepper, and minced garlic. Saute until the vegetables are softened.
- Combine Sausage and Shrimp:
- Return the cooked sausage and shrimp to the skillet with the sautéed vegetables.
- Add Tomatoes and Seasonings:
- Stir in the halved cherry tomatoes, Cajun seasoning, dried thyme, and a pinch of salt and pepper. Cook for an additional 2-3 minutes until the tomatoes start to soften.
- Create the Sauce:
- Pour in the chicken broth and heavy cream, stirring to combine. Allow the mixture to simmer for 5-7 minutes, letting the sauce thicken.
- Combine Pasta and Sauce:
- Add the cooked pasta to the skillet, tossing it in the creamy Cajun sauce until everything is well coated.
- Adjust Seasoning:
- Taste and adjust the seasoning, adding more Cajun seasoning, salt, or pepper if needed.
- Serve:
- Plate the Cajun Shrimp and Sausage Pasta, garnishing with fresh parsley and grated Parmesan cheese if desired.
- Enjoy:
- Serve immediately, and enjoy this flavorful Cajun-inspired pasta dish with your favorite crusty bread or a side salad.
