Ingredients

1½ cups (225g) fresh or frozen sweet cherries, pitted

1 tbsp lemon juice

1½ tbsp honey or sugar (adjust to taste)

½ tsp vanilla extract

⅓ cup (80ml) water

Pinch of salt

½ cup (120ml) heavy cream or full-fat Greek yogurt (for a lighter version)

Fresh mint or cherry halves for garnish (optional)
Preparation & Cooking Instructions

Cook the cherries:
In a small saucepan, combine pitted cherries, lemon juice, honey, vanilla, salt, and water. Simmer over medium heat for 8–10 minutes, or until the cherries are soft and releasing their juice. -
Blend:
Remove from heat and let cool for 5 minutes. Transfer to a blender and purée until smooth. If you want an ultra-smooth texture, strain through a fine mesh sieve into a bowl. -
Chill:
Stir in the cream or yogurt until fully combined. Cover and chill in the refrigerator for at least 2 hours, or until cold. -
Serve:
Stir well before serving. Pour into bowls and garnish with a swirl of cream, mint leaves, or a few cherry halves.
