A recipe for barbecue-flavoured pork belly bites with a sweet and sticky BBQ glaze.

Ingredients
- For the Pork Belly:
- 1 kg (2.2 lbs) pork belly, skin removed, cut into bite-sized cubes
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp cayenne pepper
- Salt and black pepper, to taste
- For the BBQ Glaze:
- 1 cup (240 ml) BBQ sauce
- 2 tbsp honey
- 2 tbsp brown sugar
- 1 tbsp apple cider vinegar
- 1 tbsp soy sauce
- 1 tsp Dijon mustard
- ½ tsp smoked paprika

Instructions
- Prepare the Pork Belly:
- Preheat the oven to 150°C (300°F).
- In a large mixing bowl, combine smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Toss the pork belly cubes in the seasoning mix until evenly coated.
- Cook the Pork Belly:
- Line a baking tray with parchment paper or foil. Spread the pork belly cubes evenly on the tray.
- Roast in the preheated oven for 1 hour, turning the pieces halfway through to ensure even cooking.
- Make the BBQ Glaze:
- While the pork belly cooks, combine all glaze ingredients in a small saucepan. Heat over medium-low, stirring occasionally, until the mixture thickens slightly (5-7 minutes). Remove from heat and set aside.
- Glaze the Pork Belly:
- After 1 hour of roasting, increase the oven temperature to 200°C (400°F).
- Brush the pork belly cubes generously with the BBQ glaze. Return to the oven and roast for another 20-30 minutes, turning and glazing the pieces every 10 minutes, until they are caramelized and sticky.
- Serve:
- Transfer the pork belly bites to a serving platter. Optionally garnish with chopped parsley or sesame seeds. Serve warm.
