- 50g icing sugar

- 200ml sparkling wine or prosecco
- 50g granulated sugar
- Juice of 1 lemon
For the Lemon Sherbet Icing Sugar:
- 100g icing sugar
- 1 tsp citric acid (optional, for a sherbet effect)
- Zest of 1 lemon

Preparation
1. Prepare the Panettone Base:
- Slice the panettone horizontally into three layers using a serrated knife. Set aside.
2. Make the Limoncello Filling:
- In a mixing bowl, combine the heavy cream, icing sugar, and lemon zest.
- Whisk until soft peaks form.
- Gradually add the limoncello and whisk until combined. Be careful not to overwhip. Chill until ready to use.
3. Prepare the Sparkling Wine Syrup:
- In a saucepan, combine the sparkling wine, granulated sugar, and lemon juice.
- Heat gently, stirring until the sugar dissolves. Simmer for 2–3 minutes, then let it cool slightly.
4. Assemble the Panettone:
- Place the bottom layer of panettone on a serving plate.
- Brush generously with the sparkling wine syrup.
- Spread a layer of the limoncello filling evenly over the surface.
- Sprinkle some chopped candied lemon peel over the filling.
- Repeat with the middle layer and top layer, ensuring the syrup and filling are evenly distributed.
- Finish with the top layer of panettone.
5. Prepare the Lemon Sherbet Icing Sugar:
- In a small bowl, mix the icing sugar, citric acid (if using), and lemon zest.
- Sift over the top of the assembled panettone for a light, sherbet-like finish.
6. Serve:
- Chill the assembled panettone for at least 1 hour before serving to allow the flavors to meld.
- Slice into 8 portions and serve with extra candied lemon peel for garnish.
