Ingredients

For the Panettone:
  • 1 medium panettone (500g), store-bought or homemade
  • 100g candied lemon peel, finely chopped
For the Limoncello Filling:
  • 200ml limoncello
  • 200ml heavy cream
  • 50g icing sugar
  • Zest of 1 lemon
For the Sparkling Wine Syrup:
  • 200ml sparkling wine or prosecco
  • 50g granulated sugar
  • Juice of 1 lemon
For the Lemon Sherbet Icing Sugar:
  • 100g icing sugar
  • 1 tsp citric acid (optional, for a sherbet effect)
  • Zest of 1 lemon

  • Small sieve
  • Sharp serrated knife
  • Serving plate

Preparation

1. Prepare the Panettone Base:
  • Slice the panettone horizontally into three layers using a serrated knife. Set aside.
2. Make the Limoncello Filling:
  • In a mixing bowl, combine the heavy cream, icing sugar, and lemon zest.
  • Whisk until soft peaks form.
  • Gradually add the limoncello and whisk until combined. Be careful not to overwhip. Chill until ready to use.
3. Prepare the Sparkling Wine Syrup:
  • In a saucepan, combine the sparkling wine, granulated sugar, and lemon juice.
  • Heat gently, stirring until the sugar dissolves. Simmer for 2–3 minutes, then let it cool slightly.
4. Assemble the Panettone:
  • Place the bottom layer of panettone on a serving plate.
  • Brush generously with the sparkling wine syrup.
  • Spread a layer of the limoncello filling evenly over the surface.
  • Sprinkle some chopped candied lemon peel over the filling.
  • Repeat with the middle layer and top layer, ensuring the syrup and filling are evenly distributed.
  • Finish with the top layer of panettone.
5. Prepare the Lemon Sherbet Icing Sugar:
  • In a small bowl, mix the icing sugar, citric acid (if using), and lemon zest.
  • Sift over the top of the assembled panettone for a light, sherbet-like finish.
6. Serve:
  • Chill the assembled panettone for at least 1 hour before serving to allow the flavors to meld.
  • Slice into 8 portions and serve with extra candied lemon peel for garnish.
