Cheddar Cheese Croquettes

Cheddar Cheese Croquettes Recipe

Ingredients

For the Croquettes

  • 1 cup grated cheddar cheese
  • 1 cup mashed potatoes (ensure they are smooth and lump-free)
  • 1 tablespoon unsalted butter
  • 1/4 cup finely chopped green onions (optional)
  • Salt and pepper to taste
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/4 cup all-purpose flour
  • 1 large egg, beaten
  • 1 cup bread crumbs (Panko or regular)
  • Vegetable oil for frying

For the Dipping Sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Preparation

  1. Prepare the Croquette Mixture:
    1. In a large bowl, combine the grated cheddar cheese, mashed potatoes, butter, green onions (if using), salt, pepper, and nutmeg (if using). Mix well until fully combined.
    2. Form the mixture into 6 equal-sized balls or logs.
  2. Bread the Croquettes
    1. Place the flour in one shallow bowl, the beaten egg in another, and the bread crumbs in a third bowl.
    2. Roll each croquette in the flour, then dip in the beaten egg, and finally coat with bread crumbs. Ensure each croquette is fully coated.
    3. Place the breaded croquettes on a baking sheet lined with parchment paper.
  3. Fry the Croquettes
    1. Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C).
    2. Either deep fry or shallow fry the croquettes but in batches, ensuring not to overcrowd the fryer or pan. Fry until golden brown and crispy, about 3-4 minutes per side. If you pan-fry then you may end up with a much shallower crust. I think deep frying is best.
    3. Remove with a slotted spoon and drain on paper towels.
  4. Prepare the Dipping Sauce
    1. In a small bowl, whisk together the mayonnaise, Dijon mustard, honey, lemon juice, salt, and pepper.
    2. Adjust seasoning to taste.

  1. Plating:
    • Serve the croquettes on a platter with the dipping sauce in a small bowl on the side. An alternative is garlic mayonnaise or aioli.
    • Garnish with fresh herbs like parsley or chives.
  2. Accompaniments:
    • Pair with a fresh green salad or coleslaw for a refreshing contrast.
    • Serve with a side of marinara sauce or spicy ketchup for additional dipping options.
