Roasted Winter Vegetables

A recipe for Roasted Winter Vegetables featuring shallots, carrots, salsify, whole baby leeks, parsnips, and beetroot. This collection of roasted vegetables goes well with any roasted meat. The combinations can be changed around too but we’ve tried to offer a balance of vegetables that comes from a Winter season. The roasted meats would include:-

  • pork
  • beef
  • chicken
  • lamb

They also make in their own right a side for any vegetarian/vegan dish. I think this combination would also be a good base for a roasted vegetable risotto or for a particular style of soup.

Ingredients:

  • 8 shallots, peeled and halved
  • 4 medium carrots, peeled and cut into chunks and/or small heritage carrots with a small amount of top left on.
  • 250g salsify, peeled and cut into batons
  • 8 whole baby leeks, trimmed and cleaned
  • 4 parsnips, peeled and cut into chunks
  • 2 large beetroot, peeled and cut into chunks and/or small whole beetroot which has had the tops removed
  • 4 tablespoons olive oil
  • Salt and black pepper to taste
  • 2-3 sprigs of fresh thyme or rosemary (optional, for extra flavor)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 200°C (400°F).

2. Prepare the Vegetables:

  • In a large mixing bowl, combine all the prepared vegetables: shallots, carrots, salsify, baby leeks, parsnips, and beetroot.
  • Drizzle olive oil over the vegetables and toss to coat evenly. Season generously with salt and black pepper. If using, add fresh thyme or rosemary sprigs for extra flavor.

3. Roast the Vegetables:

  • Spread the seasoned vegetables in a single layer on a large baking sheet or roasting pan.
  • Roast in the preheated oven for about 30-40 minutes, or until the vegetables are tender and caramelized, tossing halfway through to ensure even cooking.

4. Serve:

  • Once the vegetables are roasted to perfection, remove them from the oven.
  • Transfer the roasted vegetables to a serving platter and garnish with additional fresh herbs if desired.
  • Serve hot as a delicious side dish to accompany your favorite main course.
