East to make coconut cookies are lovely. This simple recipe is as good as it gets for ease of baking. Add a tablespoon of chocolate powder to make a chocolate coconut version too.
Makes 18; Time: 15 minutes
Ingredients:
- 1 cup self-raising flour
- 1/3 cup shredded coconut
- 1.3 cup caster sugar
- 1/3 cup butter
- egg – yolk only and beaten
Preparation:
- sift flour and mix with sugar and coconut in a bowl.
- Melt butter and add in dry ingredients with the beaten egg yolk.
- Mix all the ingredients in the bowl to make a cookie dough.
- Prepare a baking tray with a spread of greased baking paper.
- Put a tablespoon of dough onto the paper and flatten with a spoon or fork. Repeat with all the dough.
- Bake for between 19 and 15 minutes until they are medium brown.
