Sandwich Platter for Party Food

This sandwich platter includes five varieties: Tuna and Sweetcorn, Chicken and Mayonnaise, Egg and Watercress, Cheese and Onion, and Just Ham. Each type makes 4 sandwiches, and the platter provides 10 portions (each portion is half a sandwich).


Ingredients

Tuna and Sweetcorn Sandwich (4 Sandwiches)

  • 2 cans tuna (140g drained weight each)
  • 4 tbsp mayonnaise
  • 100g sweetcorn (drained)
  • 8 slices malted bread

Chicken and Mayonnaise Sandwich (4 Sandwiches)

  • 200g cooked chicken breast (shredded, with rice starch if preferred)
  • 4 tbsp mayonnaise
  • 8 slices malted bread

Egg and Watercress Sandwich (4 Sandwiches)

  • 4 large eggs (hard-boiled)
  • 4 tbsp mayonnaise
  • 1 small bunch watercress (about 25g)
  • 8 slices white bread

Cheese and Onion Sandwich (4 Sandwiches)

  • 100g medium mature Cheddar cheese (grated)
  • 100g Red Leicester cheese (grated)
  • 1 small red onion (finely chopped)
  • 4 tbsp mayonnaise
  • 8 slices oatmeal bread

Just Ham Sandwich (4 Sandwiches)

  • 150g oak-smoked ham (thinly sliced)
  • 25g butter (softened)
  • 8 slices white bread

Equipment Needed

  • Mixing bowls (at least 5, one per filling)
  • Fork (for mashing eggs)
  • Knife (for spreading and slicing)
  • Chopping board
  • Grater (for cheese)
  • Butter knife
  • Serving platter or tray
  • Cling film or foil (for covering)

Instructions

  1. Tuna and Sweetcorn Sandwiches
    • Mix the tuna, mayonnaise, and sweetcorn in a bowl until well combined.
    • Spread the mixture evenly on 4 slices of malted bread.
    • Top with the remaining slices and cut each sandwich in half diagonally.
  2. Chicken and Mayonnaise Sandwiches
    • Combine the shredded chicken and mayonnaise in a bowl.
    • Spread the filling on 4 slices of malted bread.
    • Top with the remaining slices and cut each sandwich in half diagonally.
  3. Egg and Watercress Sandwiches
    • Peel and mash the hard-boiled eggs with mayonnaise until creamy.
    • Spread the mixture on 4 slices of white bread.
    • Add a layer of watercress.
    • Top with the remaining slices and cut each sandwich in half diagonally.
  4. Cheese and Onion Sandwiches
    • Mix the grated cheeses, red onion, and mayonnaise in a bowl.
    • Spread the mixture on 4 slices of oatmeal bread.
    • Top with the remaining slices and cut each sandwich in half diagonally.
  5. Just Ham Sandwiches
    • Butter 8 slices of white bread.
    • Layer the ham evenly over 4 slices.
    • Top with the remaining slices and cut each sandwich in half diagonally.
  6. Arrange all the sandwich halves on a serving platter for a colorful, varied presentation. Cover with cling film until serving.
