Almond flour is made of finely milled blanched almonds (ie no skins) and nothing else. Don’t mistake it for almond meal, which is a different product. It is much coarser and is ground almonds with skins. Almond flour is much more versatile for baking.
Because it is oilier and has a higher water content than wheat flour, make sure you store it in an airtight container, not just in the packet it comes in. It can be a good idea to store it in a fridge or freezer.
Because it is entirely made from nuts it is high in fat (good ones), vitamins, minerals, protein, low in carb and entirely free of gluten. It is used a lot by people following the keto diet (because it reduces their carb intake) and is increasingly popular with people diagnosed as prediabetic because reducing the carb load decreases their chances of developing type 2 diabetes.
Often almond flour is used to replace 50% of wheat four in recipes, but there are lots of recipes which use almond flour exclusively – perfect if you have a gluten intolerance or are coeliac. It burns quicker than regular flour, so you will need to watch temps and maybe make a foil tent to protect the surface from overbrowning.
It is much easier to use than gluten free flour and the results are delicious. Well worth having a go!
