Ingredients

For the Croquettes

  • 2 cups mashed potatoes (ensure they are smooth and lump-free)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup finely chopped green onions or chives
  • 1 large egg yolk
  • Salt and pepper to taste
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/4 cup all-purpose flour
  • 1 large egg, beaten
  • 1 cup bread crumbs (Panko or regular)
  • Vegetable oil for frying

For the Dipping Sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Preparation

  1. Prepare the Croquette Mixture:
    1. In a large bowl, combine the mashed potatoes, grated Parmesan cheese, chopped green onions or chives, egg yolk, salt, pepper, and nutmeg (if using). Mix well until fully combined.
    2. Form the mixture into 6 equal-sized balls or logs.
  2. Bread the Croquettes:
    1. Place the flour in one shallow bowl, the beaten egg in another, and the bread crumbs in a third bowl.
    2. Roll each croquette in the flour, then dip in the beaten egg, and finally coat with bread crumbs. Ensure each croquette is fully coated.
    3. Place the breaded croquettes on a baking sheet lined with parchment paper.
  3. Fry the Croquettes:
    1. Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C).
    2. Fry the croquettes in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes per side.
    3. Remove with a slotted spoon and drain on paper towels.
  4. Prepare the Dipping Sauce:
    1. In a small bowl, whisk together the mayonnaise, Dijon mustard, honey, lemon juice, salt, and pepper.
    2. Adjust seasoning to taste.
